Carmel, IN, August 3, 2016 Master Chocolatier, Julie Bolejack, artisan and owner of Chocolate for the Spirit located in Carmel, IN is conducting culinary demonstrations, presentations and providing samples of her creations daily at the 2016 Indiana State Fair. Her onstage demos and presentations take place at 11 A.M. throughout the fair on the Marsh Culinary Stage in the Purdue Extension Ag/Hort Building. Chocolatier Julie’s demos focus around “Fine Chocolate” - some of the world’s most premium and rarest chocolate, her specialty. Julie recently returned from New York where she participated in education programs conducted by the Fine Chocolate Industry Association (FCIA) of which she is a member and active participant. One focus of the organization is to educate the public about threats to the best tasting chocolates which are poised for extinction as growers remove or replace fine flavor cacao trees with less flavorful, high-yield, disease-resistant cacao hybrids and clones – creating a world where ordinary flavor and artificially flavored chocolate are our only choices. Connecting genetics to flavor offers an important new way to protect and preserve the finest flavors for future generations. This important work is conducted by the Heirloom Cacao Preservation (HCP) Fund, a not-for profit organization working in collaboration with the United States Department of Agriculture, chocolate industry professionals, cacao farmers and chocolate enthusiasts to save the quickly diminishing cacao trees that produce high quality, flavorful chocolate. The fund certifies cacao growers of premium, heirloom cacao. During her recent trip to New York, Chocolatier Julie experienced chocolate made with newly HCP-certified cacao and shared it with chocolate enthusiast and renowned world chef, Eric Ripert of Le Bernardin.
Chocolatier Julie’s State Fair stage presentations combine education about chocolate, culinary demonstrations, product sampling and audience participation – all packed into a fast-paced 50 minute presentation in which she is often joined by other local food artisans and ‘foodies’. Audience is encouraged to take pictures and live-stream presentations. Chocolate for the Spirit’s products are for sale in the Indiana Grown Marketplace presented by Marsh located in the Purdue Extension Ag/Hort Building open 9 A.M. – 9 P.M. throughout the fair as well as at the Chocolate for the Spirit store located at 301 E. Carmel Drive, Carmel, IN. Summer hours are Tuesday – Friday 10 A.M. till 6 P.M. and Saturday noon till 6 P.M. Chocolates are made onsite at that location where classes are also conducted and available for registration from the website chocolateforthespirit.com from which customers may also order online for shipping. Seasonal products are also available for ordering from FarmersMarket.com and HoosierHarvestMarket.com throughout the year.
Several of Chocolate for the Spirit’s products featured at this year’s fair include ones recognized by the International Chocolate Salon which awarded Chocolate for the Spirit 4 Stars Superior Chocolatier for Best Chocolatiers and Confectioners in America. The salon conducts annual international juried awards and ratings of artisan chocolates and confections based on product categories or related themes such as Bars, White Chocolate, Truffles and Toffee in which Chocolate for the Spirit has been recognized.

Chocolate for the Spirit carries the Indiana Artisan designation which recognizes highest achievement of Indiana Artists and Foodists, achieved Top 5 honors at prestigious NY Chocolate Show and promoted at numerous other food events for outstanding quality. Additionally, Chocolate for the Spirit is a member of Indiana Grown, an organization dedicated to promotion of Indiana grown and produced food products.
Chocolatier Julie left the corporate world 5 years ago and began pursuing her interests as a chocolatier full time. Previously she managed large IT projects for a Fortune 50 company and has degrees in computers and business including an MBA. Chocolate for the Spirit had a location in historic Indianapolis City Market which closed in February 2016 and maintains a production studio in Shelby County with plans to fully utilize in 2017.
